Recipe By SJ Quakes' Nick Garcia: Tasty Thai Treat
- 2 bay leaves
- teaspoon of olive/cooking oil
- 1 shredded carrot
- 1 green bell pepper, sliced lengthwise
- 1 red bell pepper, sliced lengthwise
- 2 chicken breasts
- 1 lime, quartered
- 2 cans of coconut milk
- 2 thai peanut packets
- 4 cups jasmine rice
Cook jasmine rice. While rice is cooking, heat pan with oil and cook chicken through. Add coconut milk to new saucepan. Add thai peanut packets, bring to a boil and add bay leaves. Add cooked chicken, peppers and carrots. Let simmer for 3-5 minutes.
Serve over jasmine rice. Garnish with lime wedge.
Serves 4.
