MacNut Crusted Opaka Paka with Papaya Seed Aioli

Opaka Paka Fillet (Hawaiian Pink Snapper) 6 oz
Mango Chutney 1 tsp
Macadamia Nuts (Crushed) 1 1/2 Tblsp
Pinch of Salt and Pepper
Light Sesame Oil 1oz
Pipinola Ferns 1/4 cup
Unsalted Whole Butter 1 Tblsp
Hamakua Mushrooms 1/2 cup
Unsalted Whole Butter 1 Tblsp
Pinch of Salt and Pepper
Papaya Seed Aioli
Papaya Seeds 1 Tblsp
Mayonnaise 1 Tblsp
Honey 1 tsp
Rice Vinegar 1 tsp
Salad Oil 1 1/2 oz
Pinch of Salt and Pepper
Method/Plate Instructions:
Season opaka paka fillet with salt and pepper and coat one side with mango chutney. Roll coated side in macadamia nuts.
In a teflon skillet add light sesame oil and heat pan until medium hot, not smoking. Place the fish in pan coated side down and cook for 2-3 minutes taking care not to burn the nuts. Turn fillet over and cook another 2-3 minutes until fish until medium done, not over cooked. Remove, drain and plate with pipinola ferns and Hamakua mushrooms.
Finish plate with a drizzle of papaya seed aioli. Opaka paka can be substituted with another snapper fillet.
Pipinola ferns are indigenous to Hawaii and can be substituted with fiddle head ferns or your favorite vegetables. In a sauté pan, place butter and heat pan until butter is melted and just starts to brown. Add ferns and toss with salt and pepper to taste. Cook until ferns are tender.
Hamakua mushrooms are indigenous to Hawaii as well and can be substituted with oyster mushrooms or omitted. In a sauté pan place butter and heat until butter is melted. Add mushrooms and sauté until mushrooms are tender and moisture is evaporated.
For the papaya seed aioli, use a blender or hand mixer. Add papaya seeds, mayonnaise, vinegar, honey and blend until seeds are pulverized. Slowly add oil blending continually. When all the oil has been added, season with salt and pepper to taste. If storing for long periods, place in refrigerator to keep chilled.
