Every Latin American country seems to have its own take on the spicy dish.
In Peru, classic ceviche is served with corn called "choclo" and a side of sweet potatoes. The sweet vegetables go nicely with the piquant pepper, onion and lemon marinade called "leche de tigre" or "tiger's milk."
